If you can stretch to it, book interconnecting rooms or a suite with a separate living area to allow you some privacy in the evenings. Or seek out a hotel with baby-listening (at a smaller hotel, your baby monitor may do the trick) so you can eat in the restaurant or relax in the bar or lounge if you wish.
